Monopalmitin used for
Monopalmitin, also known as glycerol fatty acid ester, is the earliest and most widely used emulsifier. It can be used not only for emulsification of oil and water, but also as a surfactant and chemicalbook for defoaming purposes. Monoglyceride is a W/O type emulsifier. Due to its strong emulsification ability, it can be used as an O/W emulsifier when used alone or with sucrose fatty acid ester.
